Sanitary Transportation for Human and Animal Food (under construction)

To protect foods from farm to table during transportation, the Sanitary Transportation rule establishes requirements for shippers, loaders, carriers by motor or rail vehicle, and receivers involved in transporting human and animal food to use sanitary practices when transporting food. Under the Sanitary Transportation rule, the primary responsibility is on the shipper. These responsibilities, however, may be assigned to other parties through written contractual agreements. When the carrier and shipper have agreed in a written contract that the carrier is responsible, in whole or in part, for the sanitary conditions during transportation, food safety training of carrier personnel engaged in transportation operations is required. Such carriers are required to establish and maintain records documenting the training of operations personnel. Please note that terminologies you ordinarily use may not mean the same under this law. For example, the shipper is not necessarily a shipping company.

At the end of the course, participants will meet the training requirements on sanitary transportation of rail and motor vehicle carriers and may use their course materials to train their own staff. Participants will receive a Sanitary Transportation certificate from the University of Hawaii and will be able to obtain an FDA certificate from their online course.
